This pumpkin pie milkshake is everything I love about a slice of pumpkin pie, blended into a thick, creamy shake you sip through a straw. The secret is using an actual slice of pumpkin pie - crust and all - along with vanilla ice cream and a splash of milk, then finishing it with whipped cream, a pie-crust crumble, and a drizzle of caramel. It's the fall dessert I reach for the second there's leftover pie in the fridge.

The Best Pumpkin Pie to Use

The pie you start with makes or breaks this milkshake. We highly recommend using a slice of our Cream Cheese Pumpkin Pie. This pie is the real deal, with a rich and creamy texture that blends beautifully into a milkshake.

Pumpkin Pie with Slice Cut

The cream cheese adds a luxurious touch, and the blend of cinnamon and nutmeg creates a flavor that's truly out of this world. That's what takes this from a pumpkin milkshake to a true pumpkin pie milkshake.

While you can obviously use any leftover pumpkin pie you have around, you can also use canned Pumpkin Pie Mix. Add ⅓ cup in place of the pie slice. It won't be as good, but it will do in a pinch.

Notes

  • Use leftover pie: Day-old pie actually blends up better here, so this is the perfect way to use that last slice.
  • Thickness: Add the milk a splash at a time. You can always thin it out, but you can't thicken it back up.
  • Make it boozy: A shot of spiced rum or Baileys is lovely for the grown-ups.
  • Serve immediately. Milkshakes wait for no one.

FAQ

Can I use canned pumpkin instead of a slice of pumpkin pie?

You can use canned pumpkin pie mix as a substitute - swap the pie slice for ⅓ cup of pumpkin pie mix and add an extra pinch of cinnamon and a splash of vanilla. It will not be quite as rich as a real slice of our Cream Cheese Pumpkin Pie, but it works in a pinch.

How much milk should I add to get the right consistency?

Start with about half a cup of milk and add a little more until it reaches your ideal thickness. Whole milk, skim, or almond milk all work - it is all about finding your perfect ratio.

How do you make a milkshake thick?

Use more ice cream than milk. Start with just half a cup of milk and add it slowly, and make sure your ice cream is frozen solid before blending. Too thin? Add a scoop of ice cream. Too thick? A splash more milk.

How do you make a pumpkin milkshake without pie?

No pie on hand? Blend vanilla ice cream and milk with ⅓ cup canned pumpkin pie mix (or pumpkin puree plus a teaspoon of sugar), a good pinch of pumpkin pie spice, and a splash of vanilla. You get that cozy pumpkin flavor without a whole pie.

Can I add other fall flavors to this milkshake?

Absolutely. If you are feeling adventurous, turn it into a boozy milkshake with a shot of RumChata, or lean into the season with extra cinnamon, nutmeg, or a spoonful of caramel.

Can I use chocolate ice cream instead of vanilla?

Vanilla bean ice cream is the classic choice because it lets the pumpkin shine, but chocolate ice cream is a fun twist for chocolate lovers. It gives the whole thing a richer, almost pumpkin-mocha flavor.
