Chorizo is a spicy, well seasoned ground pork mixture that has won the heart of many. Let me show you how to make it yourself...

Using an old coffee grinder to blend a variety of peppers,  spices. Then blending in onion and vinegar for moisture.

The ancho pepper is technically a dried poblano pepper and has a smoky flavor and mild spice level...

And the guajillo pepper is a dried mirasol pepper. With a slightly high spice level and fruit notes then the ancho.

Once blended this pepper paste gets mixed into the ground pork and marinades overnight for best results.
