1bottlechilled Prosecco - 750 ml — fills about 6 flutes
raspberry or cherry juice - optional — a splash for the classic pale pink color
Instructions
Peel and pit the peaches, then purée them in a blender or food processor until smooth.
If desired, add a splash of raspberry or cherry juice to give the drink its classic pale pink color.
Place 1-2 tablespoons of the peach purée into a chilled champagne flute.
Slowly top up the flute with chilled Prosecco, being careful not to let it overflow.
Stir gently to mix the peach purée with the Prosecco.
Serve immediately and enjoy!
Notes
Bellinis feature more Prosecco than peach purée. Use truly ripe peaches — that's where the flavor is. Variations: peach juice, nectar, or peach schnapps work too, and yellow peaches are fine if white aren't available.
